  • 1 Cup Sugar
  • 1/4 Cup Unsalted Butter
  • 1/4 Cup Bourbon
  • 1 Teaspoon Cinnamon
  • 1 1/2 Cups All-Purpose Flour
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1/2 Cup Milk
  • 1 Large Egg
  • 1 Teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan lightly with butter and line the bottom with parchment paper.
  2. Caramelize the peaches by melting the butter in a medium saucepan, adding sugar, cinnamon, and bourbon.
  3. Transfer the caramelized peach mixture into the prepared cake pan, spreading it evenly.
  4. Make the cake batter by whisking together flour, baking powder, and salt in a bowl.
  5. Beat the egg and add milk, vanilla extract, and remaining sugar in another bowl. Mix until combined.
  6. Combine the dry ingredients with the wet ingredients until just mixed.
  7. Pour the batter over the caramelized peaches in the pan.
  8. Bake for about 40–45 minutes, or until a toothpick comes out clean.
  9. Cool the cake in the pan for 10 minutes, then invert onto a serving plate.
