  • 2 chicken breasts, boneless and skinless
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Feta cheese, crumbled (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season both sides with salt, pepper, oregano, and basil.
  3. Heat olive oil in an oven-safe skillet over medium heat and sauté sliced red onions for 2-3 minutes.
  4. Add minced garlic, zucchinis, and cherry tomatoes; sauté for another 5-7 minutes until tender yet crisp.
  5. Nestle the seasoned chicken breasts in the center of the skillet.
  6. Drizzle more olive oil over the chicken and transfer to the oven.
  7. Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (75°C).
  8. Sprinkle feta cheese over the dish during the last 5 minutes of baking.
  9. Let rest for about 5 minutes before serving.
