- 2 chicken breasts, boneless and skinless
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Feta cheese, crumbled (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry and season both sides with salt, pepper, oregano, and basil.
- Heat olive oil in an oven-safe skillet over medium heat and sauté sliced red onions for 2-3 minutes.
- Add minced garlic, zucchinis, and cherry tomatoes; sauté for another 5-7 minutes until tender yet crisp.
- Nestle the seasoned chicken breasts in the center of the skillet.
- Drizzle more olive oil over the chicken and transfer to the oven.
- Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (75°C).
- Sprinkle feta cheese over the dish during the last 5 minutes of baking.
- Let rest for about 5 minutes before serving.
