A comforting casserole combining zucchini with creamy cheese, perfect for family dinners.


Ingredients

  • 4 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup sour cream
  • 1 cup bread crumbs (can use gluten-free)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash your zucchinis and slice them into thin rounds.
  3. Heat olive oil in a skillet and sauté minced garlic until fragrant.
  4. Combine sliced zucchini, sautéed garlic, sour cream, half of your shredded cheese, and Italian seasoning in a bowl.
  5. Add salt and pepper to taste, stirring gently.
  6. Transfer the mixture into a greased 9×13 inch casserole dish.
  7. Top with the remaining cheese and sprinkle bread crumbs over it.
  8. Bake for 30-35 minutes until the top is golden brown and zucchini is tender.
  9. Cool for a few minutes before serving.

Notes

This dish can be made ahead and refrigerated. Let it sit at room temperature for 30 minutes before baking.
