- 4 medium zucchinis, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup sour cream
- 1 cup bread crumbs (can use gluten-free)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Wash your zucchinis and slice them into thin rounds.
- Heat olive oil in a skillet and sauté minced garlic until fragrant.
- Combine sliced zucchini, sautéed garlic, sour cream, half of your shredded cheese, and Italian seasoning in a bowl.
- Add salt and pepper to taste, stirring gently.
- Transfer the mixture into a greased 9×13 inch casserole dish.
- Top with the remaining cheese and sprinkle bread crumbs over it.
- Bake for 30-35 minutes until the top is golden brown and zucchini is tender.
- Cool for a few minutes before serving.
Notes
This dish can be made ahead and refrigerated. Let it sit at room temperature for 30 minutes before baking.
