Delicious Mexican barbecue chicken skewers marinated in vibrant spices, perfect for grilling and serving at gatherings.
Ingredients

- 1.5 lbs Boneless, skinless chicken breast
- 2 tbsp Olive Oil
- Juice from 2 limes
- 1 tsp Garlic Powder
- 1 tsp Cumin
- 1 tbsp Chili Powder
- 1 tsp Paprika
- Salt & Pepper to taste
- 1–2 assorted Bell Peppers, cut into chunks
- 1 large Onion, cut into chunks
- Wooden or metal skewers
Instructions
- Marinate the chicken by cutting it into 1-inch cubes and combining with olive oil, lime juice, garlic powder, cumin, chili powder, paprika, salt, and pepper in a bowl; mix well.
- Prepare the veggies by chopping the bell peppers and onions into chunks.
- Assemble the skewers by alternating pieces of chicken and veggies on the skewers.
- Preheat the grill to medium-high heat (about 400°F or 204°C).
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F (74°C).
- Rest the skewers for a couple of minutes before serving.
Notes
For a tropical twist, add pineapple chunks to the skewers. You can also swap the chicken for tofu or other vegetables for a vegetarian option.
