Description

Delicious Mexican barbecue chicken skewers marinated in vibrant spices, perfect for grilling and serving at gatherings.


Ingredients

  • 1.5 lbs Boneless, skinless chicken breast
  • 2 tbsp Olive Oil
  • Juice from 2 limes
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tbsp Chili Powder
  • 1 tsp Paprika
  • Salt & Pepper to taste
  • 12 assorted Bell Peppers, cut into chunks
  • 1 large Onion, cut into chunks
  • Wooden or metal skewers

Instructions

  1. Marinate the chicken by cutting it into 1-inch cubes and combining with olive oil, lime juice, garlic powder, cumin, chili powder, paprika, salt, and pepper in a bowl; mix well.
  2. Prepare the veggies by chopping the bell peppers and onions into chunks.
  3. Assemble the skewers by alternating pieces of chicken and veggies on the skewers.
  4. Preheat the grill to medium-high heat (about 400°F or 204°C).
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F (74°C).
  6. Rest the skewers for a couple of minutes before serving.

Notes

For a tropical twist, add pineapple chunks to the skewers. You can also swap the chicken for tofu or other vegetables for a vegetarian option.
