Description

Juicy chicken breasts bathed in a luscious mango glaze that’s sweet, tangy, and just a hint of savory.


Ingredients

  • 4 chicken breasts
  • 1 cup mango puree
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions

  1. Prep your chicken by thawing and seasoning with salt and pepper.
  2. Make the mango glaze by combining mango puree, soy sauce, honey, rice vinegar, garlic, and ginger.
  3. Marinate the chicken in half of the glaze for at least 30 minutes.
  4. Preheat your grill or oven to 400°F (200°C).
  5. Cook the chicken on the grill for about 6-8 minutes per side or bake for 25-30 minutes, brushing with glaze.
  6. Baste and broil for an additional 2-3 minutes for a glazed finish.
  7. Rest the chicken for 5 minutes before serving.
  8. Garnish with remaining glaze, sesame seeds, and green onions before serving.

Notes

Serve with jasmine rice or a colorful mixed salad for a complete meal.
