  • 1 cup diced cucumber
  • 1 tablespoon olive oil
  • 1/2 cup finely chopped cilantro
  • 1 tablespoon fresh lime juice
  • 2 teaspoons honey
  • 1/3 cup light mayo
  • 1 tablespoon lime juice
  • 1/2 teaspoon paprika (smoked or regular)
  • 1/4 teaspoon cumin
  • 1 teaspoon honey

Instructions

  1. Prepare the salmon by cutting it into cubes, about 1-inch pieces for even cooking.
  2. Make the honey glaze by whisking together honey, soy sauce (or tamari), and sriracha in a bowl.
  3. Heat the avocado oil in a large skillet over medium-high heat until shimmering.
  4. Cook the salmon cubes in the skillet for about 3 minutes without moving them, allowing a golden crust to form; then flip and add the glaze, cooking for another 3-4 minutes.
  5. Assemble the bowls by placing brown rice at the bottom, topping with glazed salmon, avocado, cucumber, olive oil, cilantro, and lime juice.
  6. Make the paprika mayo sauce by combining mayo, lime juice, paprika, cumin, and honey in a small bowl.
  7. Finish the bowls with the paprika mayo sauce on the side for dipping.
