- 1/3 cup light mayo
- 1 tablespoon lime juice
- 1/2 teaspoon paprika (smoked or regular)
- 1/4 teaspoon cumin
- 1 teaspoon honey
Instructions
- Prepare the salmon by cutting it into cubes, about 1-inch pieces for even cooking.
- Make the honey glaze by whisking together honey, soy sauce (or tamari), and sriracha in a bowl.
- Heat the avocado oil in a large skillet over medium-high heat until shimmering.
- Cook the salmon cubes in the skillet for about 3 minutes without moving them, allowing a golden crust to form; then flip and add the glaze, cooking for another 3-4 minutes.
- Assemble the bowls by placing brown rice at the bottom, topping with glazed salmon, avocado, cucumber, olive oil, cilantro, and lime juice.
- Make the paprika mayo sauce by combining mayo, lime juice, paprika, cumin, and honey in a small bowl.
- Finish the bowls with the paprika mayo sauce on the side for dipping.
