Delicious and crispy Korean zucchini fritters, perfect as a snack, appetizer, or light meal.

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup water
  • 1 egg
  • 2 green onions, chopped
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Prepare the zucchini: Wash and grate the zucchinis, then sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. Squeeze out excess water from the zucchini.
  3. Make the batter: In a bowl, combine squeezed zucchini, flour, water, egg, green onions, and black pepper.
  4. Heat the oil: Heat 1/4 inch of vegetable oil in a skillet over medium-high heat.
  5. Fry the fritters: Drop spoonfuls of batter into the hot oil and fry for 3-4 minutes per side until golden brown.
  6. Serve the fritters hot with a dipping sauce, if desired.

Notes

For variations, try adding cheese, spices, or herbs to the batter.
