- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup water
- 1 egg
- 2 green onions, chopped
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
- Prepare the zucchini: Wash and grate the zucchinis, then sprinkle with salt and let sit for 10 minutes to draw out moisture.
- Squeeze out excess water from the zucchini.
- Make the batter: In a bowl, combine squeezed zucchini, flour, water, egg, green onions, and black pepper.
- Heat the oil: Heat 1/4 inch of vegetable oil in a skillet over medium-high heat.
- Fry the fritters: Drop spoonfuls of batter into the hot oil and fry for 3-4 minutes per side until golden brown.
- Serve the fritters hot with a dipping sauce, if desired.
Notes
For variations, try adding cheese, spices, or herbs to the batter.
