Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup dried cranberries
- 1 cup shelled pistachios
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the flour, sugar, baking powder, and salt in a large bowl.
- Combine the melted butter, eggs, and vanilla in another bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the dried cranberries and pistachios.
- Divide the dough in half and shape each half into a log about 12 inches long.
- Bake the logs for 25-30 minutes until golden brown.
- Let the logs cool for 10 minutes, then slice them diagonally into 1-inch thick pieces.
- Bake again for 10-15 minutes until crisp and golden.
- Cool completely on a wire rack.
