Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup shelled pistachios

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the flour, sugar, baking powder, and salt in a large bowl.
  3. Combine the melted butter, eggs, and vanilla in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the dried cranberries and pistachios.
  6. Divide the dough in half and shape each half into a log about 12 inches long.
  7. Bake the logs for 25-30 minutes until golden brown.
  8. Let the logs cool for 10 minutes, then slice them diagonally into 1-inch thick pieces.
  9. Bake again for 10-15 minutes until crisp and golden.
  10. Cool completely on a wire rack.
