Deliciously crispy onion ring chips, perfect for snacking or as a party appetizer.
Ingredients

- 2 large onions
- 1 cup almond flour
- 1/2 cup parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 eggs
- Oil for frying
Instructions
- Prep your onions by peeling and slicing them into 1/4-inch thick rings. Soak in cold water for 10-15 minutes.
- Prepare your breading station with whisked eggs in one bowl and a mix of almond flour, parmesan, garlic powder, paprika, salt, and pepper in another.
- Coat the onion rings by dipping them in the egg mixture and then dredging them in the almond flour mixture.
- Heat 1 inch of oil in a skillet over medium heat.
- Fry the coated onion rings in batches for about 2-3 minutes on each side until golden brown.
- Drain excess oil on a paper towel-lined plate and sprinkle with salt while hot.
- Serve and enjoy fresh, or at room temperature with your favorite dipping sauces.
Notes
For a nut-free version, substitute almond flour with gluten-free bread crumbs. You can also bake these at 425°F for a healthier option.
