Ingredients

- 2 medium zucchinis, shredded
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh herbs (such as parsley or basil), chopped
- 1 egg
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- Olive oil (for baking or air frying)
- Marinara sauce (for dipping)
Instructions
- Preheat the oven to 400°F (200°C) or preheat your air fryer according to the manufacturer’s instructions.
- Grate the zucchinis and squeeze out the excess moisture using a clean kitchen towel.
- Combine shredded zucchini, minced garlic, grated Parmesan, chopped herbs, egg, breadcrumbs, salt, and pepper in a large mixing bowl.
- Form the mixture into bite-sized balls or patties and place on a parchment-lined baking sheet.
- Drizzle with olive oil to enhance crispiness.
- Bake for 20-25 minutes, flipping halfway, or air fry at 375°F (190°C) for 12-15 minutes until golden and crispy.
- Cool for a few minutes before serving.
Notes
