  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh herbs (such as parsley or basil), chopped
  • 1 egg
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • Olive oil (for baking or air frying)
  • Marinara sauce (for dipping)

Instructions

  1. Preheat the oven to 400°F (200°C) or preheat your air fryer according to the manufacturer’s instructions.
  2. Grate the zucchinis and squeeze out the excess moisture using a clean kitchen towel.
  3. Combine shredded zucchini, minced garlic, grated Parmesan, chopped herbs, egg, breadcrumbs, salt, and pepper in a large mixing bowl.
  4. Form the mixture into bite-sized balls or patties and place on a parchment-lined baking sheet.
  5. Drizzle with olive oil to enhance crispiness.
