Ingredients

  • 2 medium zucchinis, grated
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchinis using a box grater or a food processor.
  3. Remove excess moisture by squeezing the grated zucchini with a clean kitchen towel or cheesecloth.
  4. Mix the dried zucchini, shredded cheddar, breadcrumbs, grated Parmesan, eggs, garlic powder, onion powder, salt, and pepper in a large bowl.
  5. Form little tots from the mixture, about 1 to 2 inches in length.
  6. Prepare a baking sheet by lining it with parchment paper or greasing it with olive oil.
  7. Drizzle olive oil over the tots before baking for a golden finish.
  8. Bake for about 20-25 minutes, flipping halfway through for even crispiness.
  9. Cool for a few minutes before serving with your favorite dipping sauce.
