Ingredients

- 2 medium zucchinis, grated
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 400°F (200°C).
- Grate the zucchinis using a box grater or a food processor.
- Remove excess moisture by squeezing the grated zucchini with a clean kitchen towel or cheesecloth.
- Mix the dried zucchini, shredded cheddar, breadcrumbs, grated Parmesan, eggs, garlic powder, onion powder, salt, and pepper in a large bowl.
- Form little tots from the mixture, about 1 to 2 inches in length.
- Prepare a baking sheet by lining it with parchment paper or greasing it with olive oil.
- Drizzle olive oil over the tots before baking for a golden finish.
- Bake for about 20-25 minutes, flipping halfway through for even crispiness.
- Cool for a few minutes before serving with your favorite dipping sauce.
Notes
For extra flavor, consider adding fresh herbs or spices. You can also try making these tots vegan by using nutritional yeast and flaxseed eggs.
