- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup diced tomatoes
- 1 bell pepper (diced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Olive oil
- Parsley for garnish
Instructions
- Heat the pan: In a large skillet over medium heat, add about 1 tablespoon of olive oil. Once hot, toss in the chopped onion and sauté for about 2-3 minutes until translucent.
- Add the garlic and bell pepper: Stir in the minced garlic and diced bell pepper. Cook for an additional 3-4 minutes.
- Sauté the chicken sausage: Slice the chicken sausage into bite-sized pieces and add it to the skillet. Cook until browned, about 5-7 minutes.
- Incorporate the tomatoes: Stir in the diced tomatoes and let simmer for a minute.
- Add the orzo and broth: Stir in orzo pasta and pour in the chicken broth. Bring to a gentle boil, then reduce heat and cover.
- Let it simmer: Simmer for about 10-12 minutes, or until the orzo is al dente.
- Season to taste: Once cooked, season with salt and pepper.
- Garnish and serve: Sprinkle fresh parsley on top before serving.
Notes
For extra flavor, serve with a lemon wedge on the side.
