- 1 pound dried red beans (or canned beans)
- 1 pound Andouille sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth (or vegetable broth)
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon cayenne pepper (to taste)
- Salt and pepper to taste
- 4 cups cooked long grain rice
- Chopped green onions for garnish
Instructions
- Soak the beans overnight in a large bowl of water (or do a quick soak by boiling for 5 minutes and letting sit for an hour).
- Sauté the chopped onion, celery, and bell pepper in a large pot over medium heat for about 5 minutes until softened.
- Add the sliced Andouille sausage and cook for another 5 minutes until browned.
- Incorporate the minced garlic and cook for about 30 seconds until fragrant.
- Combine the drained and rinsed beans with the chicken broth, bay leaves, thyme, cayenne pepper, and seasoning to taste. Bring to a gentle boil then reduce to a simmer.
- Simmer for about 90 to 120 minutes, stirring occasionally, until beans are tender and creamy. Add more broth if it thickens too much.
- Taste and adjust seasoning as needed, mashing some beans for a creamier texture if desired.
- Final touches: remove bay leaves and serve over rice, garnished with chopped green onions.
