- 1 Onion (Diced)
- 8 Ounces Sliced Mushrooms
- 2 Pounds Boneless, Skinless Chicken Thighs
- Kosher Salt and Pepper
- Italian Seasoning
- 6 Cloves Garlic (Minced)
- 8 Ounces Chopped Fresh Spinach
- 1/2 Cup Sliced Sun-Dried Tomatoes
- 1 Cup Shredded Mozzarella Cheese
- 1/2 Cup Shredded Parmesan Cheese
- 1 Pint Heavy Cream
- Fresh Basil for Garnish (optional)
Instructions
- Heat your cooking oil in a Blackstone grill or skillet over medium-high heat.
- Sauté the diced onion until translucent and aromatic (about 3-4 minutes).
- Add the sliced mushrooms and cook until softened (4-5 minutes).
- Season your chicken pieces with kosher salt, pepper, and Italian seasoning.
- Cook the chicken in the pan until browned and cooked through (7-10 minutes).
- Add minced garlic and sauté for another minute.
- Stir in the chopped spinach and sun-dried tomatoes until the spinach wilts.
- Pour in the heavy cream, stir to combine, and let it simmer for 5-7 minutes.
- Remove from heat and sprinkle mozzarella and parmesan cheese over the top, mixing gently to melt.
- Garnish with fresh basil before serving.
Notes
For extra flavor, consider adding red pepper flakes for a spicy kick or using a variety of mushrooms for depth.
