Ingredients

- 2 lbs Chicken Pieces (thighs, drumsticks, or wings)
- 4 cloves Fresh Garlic, minced
- 1/4 cup Lime Juice
- 2 tsp Kosher Salt
- 1 tsp Black Pepper, freshly cracked
- 1 tbsp Fresh Thyme, or less if dried
- 1 Scotch Bonnet Pepper, optional
- Vegetable or Canola Oil for frying
Instructions
- Marinate the chicken: In a large mixing bowl, combine the chicken pieces, minced garlic, lime juice, salt, black pepper, thyme, and scotch bonnet pepper. Coat the chicken well. Cover and let it marinate for at least 1 hour, preferably overnight.
- Prepare for frying: Heat oil in a large pot or deep skillet over medium-high heat. Ensure the oil is around 350°F (175°C).
- Add the marinated chicken pieces to the hot oil. Fry in batches if necessary, for about 10-12 minutes per side until golden brown and crispy.
- Drain and rest: Once cooked through, remove the chicken and drain on paper towels. Let rest for a few minutes before serving.
Notes
For a gluten-free option, use gluten-free flour for dredging. Resting the chicken post-fry helps retain juiciness.
