Instructions
- Preheat the oven to 350°F (175°C).
- Grate the zucchini and squeeze out excess moisture.
- Mix the grated zucchini, flour, baking powder, salt, and pepper in a bowl.
- In another bowl, whisk together the eggs, milk, and olive oil.
- Combine the wet and dry ingredients until just mixed.
- Add the grated Parmesan and any optional veggies.
- Pour the mixture into a greased pie dish.
- Bake for 30–35 minutes, until golden and a toothpick comes out clean.
