- 1 can black beans, drained and rinsed
- 1 sausage link (chicken or turkey), sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Gather your ingredients.
- Sauté the sausage in a large skillet over medium heat for about 5 minutes.
- Add the diced onion and minced garlic; sauté for 2-3 minutes.
- Toss in the diced bell pepper and cook for 3-4 minutes.
- Sprinkle in the smoked paprika and cumin; stir well.
- Add the rice and stir together for about 2 minutes.
- Stir in the black beans and broth; bring to a boil.
- Simmer for 20-25 minutes, covered, until the rice is tender.
- Season with salt and pepper, and serve hot with cilantro.
