Ingredients

  • 8 oz Pasta (your choice)
  • 1 cup Pumpkin Puree
  • 1 cup Cooked Lean Protein (chicken, turkey, or plant-based)
  • 1 cup Seasonal Vegetables (like spinach or kale)
  • 1 cup Cheese (mozzarella or dairy alternative)
  • 1/2 cup Milk (or milk alternative)
  • 1 tsp Garlic Powder
  • 1 tsp Italian Seasoning
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta in a large pot of salted water until al dente.
  3. Sauté your vegetables in a skillet until tender.
  4. Mix the pasta, pumpkin puree, protein, sautéed veggies, half the cheese, milk, seasoning, salt, and pepper in a bowl.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Top with the remaining cheese.
  7. Bake for 30-35 minutes until bubbly and golden.
  8. Cool for 10 minutes before serving.
