Description

A zesty and refreshing take on the classic coleslaw, packed with crunchy vegetables and tangy dressing.


Ingredients

  • 1 small head of green cabbage, shredded
  • 1 small head of purple cabbage, shredded
  • 2 large carrots, grated
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon celery seeds (optional)

Instructions

  1. Prep the cabbage by shredding the green and purple cabbages and placing them in a large mixing bowl.
  2. Grate the carrots and add them to the cabbage mixture.
  3. Make the dressing by whisking together apple cider vinegar, olive oil, sugar, salt, pepper, and celery seeds in a separate bowl.
  4. Combine the dressing with the cabbage and carrot mixture and toss gently.
  5. Let it marinate in the fridge for at least an hour for the flavors to meld.
