Ingredients

- 1 small head of green cabbage, shredded
- 1 small head of purple cabbage, shredded
- 2 large carrots, grated
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon celery seeds (optional)
Instructions
- Prep the cabbage by shredding the green and purple cabbages and placing them in a large mixing bowl.
- Grate the carrots and add them to the cabbage mixture.
- Make the dressing by whisking together apple cider vinegar, olive oil, sugar, salt, pepper, and celery seeds in a separate bowl.
- Combine the dressing with the cabbage and carrot mixture and toss gently.
- Let it marinate in the fridge for at least an hour for the flavors to meld.
- Taste and adjust seasoning to your preference before serving.
Notes
This coleslaw can be made a day ahead, and its flavors improve over time. Add diced fruits or different vinegars for creative variations.
