  • 2 tablespoons brown sugar
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 1 tablespoon vegetable oil
  • 1 tablespoon honey
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • Fresh herbs (cilantro, for garnish)
  • Lime wedges (for serving)

Instructions

  1. Whisk together the fish sauce, soy sauce, brown sugar, minced garlic, grated ginger, vegetable oil, honey, black pepper, and chili powder in a large bowl.
  2. Add the chicken thighs to the bowl, ensuring they’re well coated in the marinade. Cover and let them marinate in the refrigerator for at least 1 hour.
  3. Preheat your grill to medium-high heat (about 400°F) and lightly oil the grill grates.
  4. Remove the chicken from the marinade, allowing excess liquid to drip off. Place the thighs on the grill, cooking for about 6-8 minutes per side.
  5. Transfer the chicken to a plate and cover loosely with foil. Let it rest for 5-10 minutes before serving.

Notes

For an extra flavor boost, squeeze lime juice over the chicken while it rests. Consider serving with jasmine rice or Vietnamese spring rolls.
