Instructions

  1. Pick and prep your peaches: Wash and peel them; slice and pit to measure 4 cups.
  2. Make a quick peach purée: Blend peaches, sugar, and lemon juice until smooth.
  3. Taste and adjust sweetness/acid: Modify sugar or lemon juice as needed.
  4. Chill the base: Refrigerate purée for at least 1 hour for best texture.
  5. Churn or freeze: Use an ice cream maker or a shallow pan to freeze purée, scraping every 30 minutes until smooth.
  6. Firm up and store: Transfer to an airtight container and freeze for at least 2 hours.
  7. Scoop and serve: Let sit at room temperature to soften slightly before scooping.
