Description

Ingredients

  • 2 sweet potatoes
  • 1 cup cooked quinoa or oatmeal
  • 1/2 cup Greek yogurt
  • 1 banana, sliced
  • 1/4 cup nuts (almonds, walnuts, or pecans)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon cinnamon
  • Optional toppings: Berries, chia seeds, coconut flakes

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub and peel the sweet potatoes, chop into bite-sized cubes, place on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat.
  2. Roast sweet potatoes in the oven for 25-30 minutes, shaking halfway through until tender and golden brown.
  3. While sweet potatoes are roasting, rinse quinoa and cook according to package instructions or prepare oatmeal as desired.
  4. In a bowl, start with a scoop of quinoa or oatmeal, top with warm roasted sweet potatoes, and add a dollop of Greek yogurt.
  5. Layer with sliced bananas, sprinkle nuts, drizzle honey or maple syrup, and finish with a sprinkle of cinnamon.
