Ingredients

- 1 pound smoked sausage, sliced
- 2 bell peppers (red, green, or yellow), sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Fresh parsley, for garnish
Instructions
- Heat the skillet by placing a large skillet over medium heat. Add the olive oil and allow it to warm up.
- Toss in the sliced smoked sausage and let it cook for about 4-5 minutes, stirring occasionally until it’s nicely browned.
- Add in your sliced onions and bell peppers. Sauté for another 5-7 minutes until the veggies are tender.
- Sprinkle in the garlic powder, paprika, and a pinch of salt and pepper. Stir everything to combine.
- Adjust the seasoning as necessary and taste the dish.
- Turn off the heat and finish with a sprinkle of fresh parsley to garnish.
Notes
Serve over rice, quinoa, or wrapped in tortillas for a complete meal. You can also add other veggies for more nutrients.
