Ingredients

  • 8 to 10 bone-in, skin-on chicken thighs
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 1/3 cup brown sugar
  • 14 to 16 cloves garlic
  • Kosher salt and pepper
  • Crushed red pepper flakes (optional)

Instructions

  1. Mix the magic: In a large bowl, combine the soy sauce, honey, brown sugar, kosher salt, and black pepper. Whisk until well combined. This will be your mouth-watering marinade.
  2. Peel the cloves of garlic, but don’t chop them just yet. You want them to infuse the marinade without breaking down entirely.
  3. Place the chicken thighs in the marinade, making sure they are well coated. Add the garlic cloves, stirring to ensure they nestle up against the chicken. Cover the bowl with plastic wrap and let it marinate in the fridge for at least 30 minutes, but preferably 2 to 4 hours.
  4. Preheat your smoker to about 250°F (121°C). If using a gas or electric grill, add soaked wood chips for a fragrant touch.
  5. Remove the chicken from the marinade and pat dry lightly.
  6. Season the chicken thighs with a little more kosher salt, black pepper, and crushed red pepper flakes.
  7. Place them on the smoker grate with the skin side up. Close the lid and let them smoke for about 2 to 2.5 hours, checking that the internal temperature reaches 165°F (74°C).
  8. Brush the reserved marinade over the chicken thighs about 30 minutes before they’re done.
  9. Move the chicken to a hot grill for an additional 5–7 minutes per side for the final sear.
  10. Let the chicken rest for about 5–10 minutes before serving warm.

Notes

Serving suggestions include pairing with mashed potatoes or coleslaw for a complete meal. Use leftover marinade for extra flavor.
