- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into pieces
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Peel and devein the shrimp, trim the asparagus, slice the mushrooms, and mince the garlic.
- Heat the olive oil in a skillet or wok over medium-high heat.
- Cook the shrimp for 1-2 minutes per side until pink and opaque; remove from pan.
- Sauté the asparagus for 2-3 minutes, then add mushrooms and garlic; continue stirring for 3-4 minutes until softened.
- Combine the shrimp back with the veggies and drizzle soy sauce; stir to combine and sauté for another minute.
- Season with salt and pepper to taste and serve hot.
Notes
Add a sprinkle of sesame seeds or fresh herbs for garnish. Serve over jasmine rice or quinoa for a complete meal.
