Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into pieces
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Peel and devein the shrimp, trim the asparagus, slice the mushrooms, and mince the garlic.
  2. Heat the olive oil in a skillet or wok over medium-high heat.
  3. Cook the shrimp for 1-2 minutes per side until pink and opaque; remove from pan.
  4. Sauté the asparagus for 2-3 minutes, then add mushrooms and garlic; continue stirring for 3-4 minutes until softened.
  5. Combine the shrimp back with the veggies and drizzle soy sauce; stir to combine and sauté for another minute.
  6. Season with salt and pepper to taste and serve hot.

Notes

Add a sprinkle of sesame seeds or fresh herbs for garnish. Serve over jasmine rice or quinoa for a complete meal.
