- 2 ripe mangoes
- 1 small red onion
- 1 small cucumber
- 1 red bell pepper
- 1 cup cherry tomatoes
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 3 tablespoons fresh lime juice
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prep your ingredients by washing all produce. Peel and pit the mangoes, then slice them into strips or cubes.
- Slice the vegetables: red onion, cucumber, and red bell pepper.
- Halve the cherry tomatoes for maximum juiciness.
- Chop the fresh herbs: cilantro and mint.
- Whisk together lime juice, honey, olive oil, salt, and pepper in a small bowl.
- Combine mangoes, onion, cucumber, red bell pepper, cherry tomatoes, cilantro, and mint in a large bowl.
- Dress the salad with the dressing and toss gently.
- Chill in the refrigerator for 20-30 minutes if desired.
- Serve in bowls or on a platter, garnished with extra herbs if preferred.
Notes
Best enjoyed fresh, but can be made ahead without dressing. Store leftovers in the fridge for up to 2 days.
