Ingredients

  • 2 ripe mangoes
  • 1 small red onion
  • 1 small cucumber
  • 1 red bell pepper
  • 1 cup cherry tomatoes
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prep your ingredients by washing all produce. Peel and pit the mangoes, then slice them into strips or cubes.
  2. Slice the vegetables: red onion, cucumber, and red bell pepper.
  3. Halve the cherry tomatoes for maximum juiciness.
  4. Chop the fresh herbs: cilantro and mint.
  5. Whisk together lime juice, honey, olive oil, salt, and pepper in a small bowl.
  6. Combine mangoes, onion, cucumber, red bell pepper, cherry tomatoes, cilantro, and mint in a large bowl.
  7. Dress the salad with the dressing and toss gently.
  8. Chill in the refrigerator for 20-30 minutes if desired.
  9. Serve in bowls or on a platter, garnished with extra herbs if preferred.

Notes

Best enjoyed fresh, but can be made ahead without dressing. Store leftovers in the fridge for up to 2 days.
