Description

A hearty and flavorful New Orleans classic, red beans and rice brings warmth and comfort to the table.


Ingredients

  • 3 tablespoons canola oil (or vegetable oil)
  • 1 large onion (chopped)
  • 1 large green bell pepper (chopped)
  • 23 stalks celery (finely chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons Cajun seasoning (to taste)
  • 1 teaspoon dried thyme
  • 1 large bay leaf
  • 1 can (15-ounce) tomato sauce
  • 2 cups vegetable broth (or chicken broth)
  • 3 cans (15-ounce each) red beans (drained and rinsed)
  • 1 teaspoon Worcestershire sauce
  • 1 package (14-ounce) Andouille sausage (sliced)
  • Salt and freshly ground black pepper (to taste)
  • Hot sauce (to taste)
  • Chopped fresh parsley (for garnish)
  • 3 cups cooked rice

Instructions

  1. Heat the oil in a large pot or Dutch oven over medium heat.
  2. Sauté the chopped onion, bell pepper, and celery for about 4-5 minutes.
  3. Add garlic, Cajun seasoning, and thyme; cook for another minute.
  4. Pour in tomato sauce and broth, stirring to combine.
  5. Add the drained red beans and Worcestershire sauce.
  6. Incorporate the sliced Andouille sausage and season with salt and pepper.
  7. Simmer by adding the bay leaf and covering the pot for about 25-30 minutes.
  8. Taste and adjust seasoning as needed.
  9. Remove the bay leaf before serving.
  10. Serve over fluffy cooked rice.

Notes

For a vegetarian version, substitute Andouille sausage with plant-based sausage or mushrooms.
