Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Beat together the softened butter, brown sugar, and granulated sugar until creamy.
- Mix in the pumpkin purée and vanilla extract.
- Whisk together flour (or oats), baking soda, salt, and spices in another bowl.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Fold in the white chocolate chips.
- Scoop dough balls onto the prepared baking sheet, leaving space for spreading.
- Bake for 10-12 minutes until lightly golden on edges.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
