  • 2 eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the pumpkin purée, cottage cheese, sugar, and eggs until smooth.
  3. Spice it up by adding cinnamon, nutmeg, and salt.
  4. Combine the flour, baking soda, and baking powder in another bowl.
  5. The merge: slowly add the dry mixture to the wet mixture.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 45–55 minutes until a toothpick comes out clean.
  8. Cool for 10 minutes before transferring to a wire rack.
