Instructions
- Preheat your oven to 350°F (175°C).
- Mix the pumpkin purée, cottage cheese, sugar, and eggs until smooth.
- Spice it up by adding cinnamon, nutmeg, and salt.
- Combine the flour, baking soda, and baking powder in another bowl.
- The merge: slowly add the dry mixture to the wet mixture.
- Pour the batter into a greased loaf pan.
- Bake for 45–55 minutes until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a wire rack.
