Ingredients
1 cup chopped nuts (almonds, pecans, or walnuts)
1/2 cup shredded coconut
1/3 cup pumpkin puree
1/4 cup chopped dried apple
1/4 cup pumpkin seeds
2 tbsp flaxseed meal
1/4 cup maple syrup or keto sweetener
1 tbsp coconut oil
1 tsp cinnamon
1/2 tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 325°F (160°C). Line a baking sheet with parchment.
In a bowl, mix all ingredients until well combined.
Spread onto the sheet in a thick, even layer. Press down firmly to encourage clusters.
Bake for 25–30 minutes, flipping halfway, until golden and crisp.
Let cool completely before breaking into chunks.
