Ingredients

  • 1 cup Greek yogurt
  • 8 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup milk (or almond milk)
  • 1/4 tsp saffron threads
  • 1/4 tsp ground cardamom
  • 1/4 cup protein powder (vanilla flavor recommended)
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the saffron threads and 2 tablespoons of warm milk in a small bowl and let sit for about 10 minutes.
  3. Beat the softened cream cheese in a large mixing bowl until smooth.
  4. Add the granulated sugar and Greek yogurt to the cream cheese, mixing until fully blended.
  5. Incorporate the saffron infusion, remaining milk, protein powder, lemon juice, cardamom, and vanilla extract, mixing until smooth.
  6. Grease a springform pan or line with parchment paper.
  7. Pour the cheesecake mixture into the prepared pan and bake for 40-45 minutes.
  8. Turn off the oven and allow the cheesecake to cool in the oven for about 10 minutes.
  9. Chill in the fridge for at least 4 hours or overnight.
  10. Serve with optional toppings like fresh fruit or honey.

Notes

For a vegan option, substitute cream cheese with a vegan alternative and use silken tofu.
