- 1 lb Lean Ground Turkey
- 4 Bell Peppers
- 1 Onion, finely chopped
- 2 Garlic cloves, minced
- 1 cup Cooked Quinoa or Rice
- 1 cup Black Beans, rinsed
- 1 cup Corn
- 2 tsp Chili Powder
- 1 tsp Cumin
- Salt and Pepper, to taste
- 1 cup Cheese or Dairy Alternative (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the peppers by slicing the tops off and removing seeds.
- Sauté the onion in olive oil over medium heat until softened, about 3-4 minutes.
- Add minced garlic and sauté for an additional minute.
- Cook the ground turkey until browned and cooked through, about 6-8 minutes.
- Mix in quinoa, black beans, corn, chili powder, cumin, salt, and pepper, cooking for 3-4 minutes.
- Stuff the turkey mixture into each bell pepper, pressing down slightly.
- Top with cheese if desired.
- Bake covered with foil for 25 minutes, then remove foil and bake for an additional 10-15 minutes until tender.
- Serve and enjoy!
