- 1 cup pumpkin puree
- 1 cup protein powder (whey or plant-based)
- 1 cup whole wheat flour
- 1/2 cup honey or maple syrup
- 2 eggs
- 1/4 cup milk or dairy alternative
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Gather a muffin tin and line it with paper liners or spray it with non-stick cooking spray.
- Mix the pumpkin puree, eggs, and milk in a large bowl until smooth.
- Add honey or maple syrup and stir until well combined.
- Sift together the whole wheat flour, protein powder, baking powder, baking soda, pumpkin pie spice, and salt in another bowl.
- Combine the wet and dry ingredients, folding gently until just combined.
- Fill the muffin tin cups about two-thirds full with batter.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
