Instructions

  1. Prep your pan: Line an 8×8-inch or 9×9-inch baking pan with parchment paper.
  2. Mix the yogurt and sweetener: Whisk together Greek yogurt, honey or maple syrup, and vanilla extract until smooth.
  3. Add matcha powder: Gradually whisk in matcha powder until evenly distributed.
  4. Incorporate shredded coconut: Fold in the unsweetened shredded coconut with a spatula.
  5. Pour into the pan: Transfer the mixture into the prepared pan and smooth it into an even layer.
  6. Melt the chocolate: In a microwave-safe bowl, melt the dark chocolate chips until smooth.
  7. Drizzle it on: Drizzle the melted chocolate over the matcha mixture.
  8. Sprinkle with sea salt: Finish with a pinch of flaky sea salt over the top.
  9. Freeze until firm: Place in the freezer for at least 120-180 minutes.
