A delightful twist on classic rice pudding, infused with cinnamon sugar and packed with protein for a comforting yet nutritious dessert.


Ingredients

  • 1 cup uncooked short-grain rice
  • 4 cups milk (any kind)
  • 1/2 cup sweetener (sugar, honey, maple syrup, or stevia)
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/2 cup protein powder
  • 1/4 cup raisins (optional)
  • 2 tablespoons butter or coconut oil

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rinsed rice, milk, sweetener, and half of the cinnamon in a large pot. Bring to a gentle boil over medium heat.
  3. Simmer on low heat, cover, and cook for 20-25 minutes, stirring occasionally.
  4. Add the protein powder, remaining cinnamon, vanilla extract, and butter or coconut oil. Stir well.
  5. Garnish with raisins and a sprinkle of cinnamon or honey. Let cool and refrigerate for at least an hour before serving.
