Description

Flavorful baked potatoes stuffed with all your favorite pizza toppings for a comfort food mash-up.


Ingredients

  • 4 Russet Potatoes
  • 1 cup Tomato Sauce
  • 2 cups Mozzarella Cheese
  • 1 cup Pepperoni, sliced
  • 1 cup Bell Peppers, diced
  • 1/2 cup Onions, diced
  • 1/2 cup Olives, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and poke them all over with a fork.
  3. Bake in the oven for about 45-60 minutes until tender.
  4. Heat olive oil in a skillet and sauté onions and bell peppers until tender.
  5. Add sliced pepperoni and heat for another couple of minutes.
  6. Slice the baked potatoes in half lengthwise and scoop out some flesh.
  7. Mix potato flesh with tomato sauce, sautéed veggies, and half of the mozzarella cheese.
  8. Spoon the mixture back into the potatoes and top with remaining cheese.
  9. Bake again for about 15-20 minutes, until cheese is melted.
  10. Serve warm, garnished with fresh herbs.
