- 4 Russet Potatoes
- 1 cup Tomato Sauce
- 2 cups Mozzarella Cheese
- 1 cup Pepperoni, sliced
- 1 cup Bell Peppers, diced
- 1/2 cup Onions, diced
- 1/2 cup Olives, sliced
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly and poke them all over with a fork.
- Bake in the oven for about 45-60 minutes until tender.
- Heat olive oil in a skillet and sauté onions and bell peppers until tender.
- Add sliced pepperoni and heat for another couple of minutes.
- Slice the baked potatoes in half lengthwise and scoop out some flesh.
- Mix potato flesh with tomato sauce, sautéed veggies, and half of the mozzarella cheese.
- Spoon the mixture back into the potatoes and top with remaining cheese.
- Bake again for about 15-20 minutes, until cheese is melted.
- Serve warm, garnished with fresh herbs.
