- 1 cup Brown Sugar, packed
- ½ cup Granulated Sugar
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 2 ½ cups All-Purpose Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- 1 cup Chocolate Chips
- Your favorite Ice Cream
- Patriotic Sprinkles
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time and mix in the vanilla.
- Combine the flour, baking soda, and salt in another bowl, then gradually add to the wet ingredients.
- Fold in the chocolate chips until evenly distributed.
- Scoop mounds of dough onto a lined baking sheet.
- Bake for 10-12 minutes until edges are golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Assemble the sandwiches with a scoop of ice cream between two cookies.
- Roll in sprinkles and freeze for 30 minutes to set.
Notes
For a dairy-free option, substitute butter with coconut oil and use non-dairy ice cream. Store leftovers in an airtight container in the freezer.
