Ingredients

  • 1 cup Brown Sugar, packed
  • ½ cup Granulated Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 2 ½ cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 cup Chocolate Chips
  • Your favorite Ice Cream
  • Patriotic Sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time and mix in the vanilla.
  4. Combine the flour, baking soda, and salt in another bowl, then gradually add to the wet ingredients.
  5. Fold in the chocolate chips until evenly distributed.
  6. Scoop mounds of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes until edges are golden.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  9. Assemble the sandwiches with a scoop of ice cream between two cookies.
  10. Roll in sprinkles and freeze for 30 minutes to set.

Notes

For a dairy-free option, substitute butter with coconut oil and use non-dairy ice cream. Store leftovers in an airtight container in the freezer.
