Ingredients

  • 4 thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan (for sauce)
  • Salt & pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the breading station with flour, eggs, and a breadcrumb-Parmesan mixture.
  3. Coat each chicken cutlet in flour, dip in egg, and press into the breadcrumb mixture.
  4. Sear the chicken in a large skillet with olive oil and butter for 3-4 minutes on each side until golden.
  5. Finish cooking in the oven for about 10-12 minutes.
  6. Make the creamy garlic sauce by melting remaining butter, sautéing garlic, adding broth, cream, and Parmesan.
  7. Serve plated with sauce and garnish.

Notes

For a dairy-free option, substitute heavy cream with coconut milk or cashew cream.
