Description

A bold, crunchy, protein-packed Cobb salad with grilled chicken, creamy avocado, and a tangy honey-Dijon dressing.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Sea salt and black pepper (to taste)
  • 23 tbsp olive oil
  • 23 hearts romaine lettuce
  • 4 hard-boiled eggs
  • 2 medium avocados
  • 1 pint cherry tomatoes
  • 1 medium cucumber
  • 46 slices bacon
  • 1/4 small red onion
  • 2 tbsp fresh chives or parsley
  • 1 tsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp raw honey

Instructions

  1. Prep and season the chicken: Pat the chicken breasts dry, mix seasoning, and rub onto the chicken.
  2. Heat the grill or grill pan to medium-high heat.
  3. Grill the chicken for 4–5 minutes on each side until cooked through.
  4. Rest and slice the chicken after grilling.
  5. Cook the bacon until crispy and prepare the hard-boiled eggs.
  6. Prep the veggies and assemble the salad base.
  7. Make the honey-Dijon dressing by mixing ingredients in a jar.
  8. Finish the salad by topping it with chicken, dressing, and fresh herbs.

Notes

For optimal flavor, let the chicken rest after grilling. Use extra-virgin olive oil for the dressing.
