Ingredients

  • 8 bone-in, skin-on chicken thighs (about 3 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 3 tablespoons brown sugar for sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon honey
  • 1 teaspoon liquid smoke
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep the chicken thighs by rinsing and drying them with a paper towel.
  3. Make the spice rub by mixing olive oil, salt, black pepper, brown sugar, paprika, garlic powder, onion powder, chili powder, cumin, smoked paprika, and cayenne pepper in a bowl.
  4. Coat the chicken thighs with the spice mixture, ensuring to get underneath the skin.
  5. Prepare the BBQ sauce by mixing ketchup, apple cider vinegar, Worcestershire sauce, honey, liquid smoke, and remaining garlic and onion powders in another bowl.
  6. Bake the chicken thighs on a lined tray with half the BBQ sauce poured over them for about 35-40 minutes.
  7. Broil for 2-3 minutes at the end for extra crispiness.
  8. Rest the chicken thighs for 5-10 minutes before serving.

Notes

You can marinate the chicken thighs overnight for deeper flavors. Substitute ingredients as desired for variety.
