- 8 bone-in, skin-on chicken thighs (about 3 lbs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons brown sugar
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup ketchup
- 1/4 cup apple cider vinegar
- 3 tablespoons brown sugar for sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon honey
- 1 teaspoon liquid smoke
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prep the chicken thighs by rinsing and drying them with a paper towel.
- Make the spice rub by mixing olive oil, salt, black pepper, brown sugar, paprika, garlic powder, onion powder, chili powder, cumin, smoked paprika, and cayenne pepper in a bowl.
- Coat the chicken thighs with the spice mixture, ensuring to get underneath the skin.
- Prepare the BBQ sauce by mixing ketchup, apple cider vinegar, Worcestershire sauce, honey, liquid smoke, and remaining garlic and onion powders in another bowl.
- Bake the chicken thighs on a lined tray with half the BBQ sauce poured over them for about 35-40 minutes.
- Broil for 2-3 minutes at the end for extra crispiness.
- Rest the chicken thighs for 5-10 minutes before serving.
Notes
You can marinate the chicken thighs overnight for deeper flavors. Substitute ingredients as desired for variety.
