Ingredients

  • 1/2 cup almond flour (for the filling)
  • 2 tablespoons oat flour
  • 1 tablespoon tapioca starch
  • 1 teaspoon matcha powder (sifted, optional)
  • 1/8 teaspoon baking soda
  • 2 tablespoons agave or maple syrup
  • 1 tablespoon coconut oil, melted
  • 1 cup icing sugar (sifted)
  • 1/2 cup vegan butter, room temperature
  • 1 teaspoon vanilla extract
  • 12 teaspoons almond milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix the dry ingredients: almond flour, oat flour, tapioca starch, baking soda, and sea salt in a bowl.
  3. Combine the wet ingredients in another bowl: melted coconut oil, agave syrup, orange extract, vanilla extract, and orange zest.
  4. Fold the wet mixture into the dry mixture until combined but slightly crumbly.
  5. Shape the dough into small balls and place on the baking sheets about 1 inch apart.
  6. Bake for 10-12 minutes until the edges are golden brown and the centers look slightly underbaked.
  7. Cool the cookies for 5 minutes on the baking sheet, then transfer to a wire rack.
  8. Make the filling by beating together vegan butter and icing sugar. Add remaining almond flour, oat flour, tapioca starch, optional matcha powder, baking soda, and agave syrup. Gradually mix in almond milk to reach desired consistency.
  9. Sandwich the filling between two cooled cookies.
