Description
A comforting, one-pot dish that blends creamy mac and cheese with sweet and savory BBQ chicken, perfect for busy weeknights.
Ingredients
Scale
- 2 cups elbow macaroni
- 2 cups cooked chicken, shredded
- 2 cups shredded cheese (cheddar or a blend)
- 1 cup BBQ sauce
- 4 cups chicken broth
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Green onions or parsley for garnish (optional)
Instructions
- Cook the pasta: Begin by bringing a large pot of salted water to a boil. Once boiling, add the elbow macaroni and cook for about 1-2 minutes less than the package instructions (around 6-7 minutes) for al dente. Drain and set aside.
- Combine the ingredients: In the same pot, pour in the 4 cups of chicken broth. Bring it back to a simmer over medium heat. Whisk in the BBQ sauce, honey, garlic powder, and onion powder.
- Add the chicken: Toss in the shredded chicken to the pot and stir until well combined.
- Mix in the pasta: Carefully add the cooked elbow macaroni to your pot and stir everything together.
- Add the shredded cheese gradually, stirring continuously until it melts and makes the whole concoction ooey-gooey.
- Seasoning time: Taste the mixture and decide how much salt and pepper to add.
- Serve it up: Once that’s done, serve it hot and garnish it with green onions or parsley.
