Description

A comforting, one-pot dish that blends creamy mac and cheese with sweet and savory BBQ chicken, perfect for busy weeknights.

Ingredients

Scale
  • 2 cups elbow macaroni
  • 2 cups cooked chicken, shredded
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 cup BBQ sauce
  • 4 cups chicken broth
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Green onions or parsley for garnish (optional)

Instructions

  1. Cook the pasta: Begin by bringing a large pot of salted water to a boil. Once boiling, add the elbow macaroni and cook for about 1-2 minutes less than the package instructions (around 6-7 minutes) for al dente. Drain and set aside.
  2. Combine the ingredients: In the same pot, pour in the 4 cups of chicken broth. Bring it back to a simmer over medium heat. Whisk in the BBQ sauce, honey, garlic powder, and onion powder.
  3. Add the chicken: Toss in the shredded chicken to the pot and stir until well combined.
  4. Mix in the pasta: Carefully add the cooked elbow macaroni to your pot and stir everything together.
  5. Add the shredded cheese gradually, stirring continuously until it melts and makes the whole concoction ooey-gooey.
  6. Seasoning time: Taste the mixture and decide how much salt and pepper to add.
  7. Serve it up: Once that’s done, serve it hot and garnish it with green onions or parsley.
