Description

A comforting and hearty beef stew that’s high in protein, filled with lean beef and nutritious vegetables.


Ingredients

  • 1 lb Lean Beef (Chuck or Round)
  • 3 Carrots, chopped
  • 2 Potatoes (Yukon Gold or Russet), chopped
  • 2 Celery stalks, chopped
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef Broth (low-sodium)
  • 2 tbsp Tomato Paste
  • 2 tsp Thyme
  • 2 Bay Leaves
  • Salt and Pepper, to taste

Instructions

  1. Prep your ingredients by chopping the vegetables into bite-sized pieces.
  2. Sear the beef in a large pot over medium-high heat with a splash of oil for about 3-4 minutes.
  3. Remove the beef and sauté the onion and garlic in the drippings for 2-3 minutes.
  4. Add the carrots and celery and sauté for another 2-3 minutes.
  5. Return the beef to the pot and pour in the beef broth along with potatoes and spices.
  6. Bring the stew to a gentle boil, then reduce heat to low, cover, and simmer for 90-120 minutes.
  7. Taste and adjust the seasoning before serving hot.

Notes

Add a splash of vinegar before serving to brighten flavors. Customize your herbs and spices to taste.
