Ingredients

- 1 lb Lean Beef (Chuck or Round)
- 3 Carrots, chopped
- 2 Potatoes (Yukon Gold or Russet), chopped
- 2 Celery stalks, chopped
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 4 cups Beef Broth (low-sodium)
- 2 tbsp Tomato Paste
- 2 tsp Thyme
- 2 Bay Leaves
- Salt and Pepper, to taste
Instructions
- Prep your ingredients by chopping the vegetables into bite-sized pieces.
- Sear the beef in a large pot over medium-high heat with a splash of oil for about 3-4 minutes.
- Remove the beef and sauté the onion and garlic in the drippings for 2-3 minutes.
- Add the carrots and celery and sauté for another 2-3 minutes.
- Return the beef to the pot and pour in the beef broth along with potatoes and spices.
- Bring the stew to a gentle boil, then reduce heat to low, cover, and simmer for 90-120 minutes.
- Taste and adjust the seasoning before serving hot.
Notes
Add a splash of vinegar before serving to brighten flavors. Customize your herbs and spices to taste.
