Ingredients

  • 1 pound Smoked Sausage (Andouille or Kielbasa)
  • 23 Bell Peppers (mixed colors: red, yellow, green)
  • 1 medium Onion (yellow preferred)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt and Pepper (to taste)
  • Wooden Skewers (soaked in water if grilling)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep the veggies by washing and chopping the bell peppers and onion into bite-sized pieces.
  3. Cut the smoked sausage into 1.5-inch pieces.
  4. Assemble the skewers by alternating sausage and vegetables.
  5. Drizzle remaining olive oil across the skewers on a baking sheet lined with parchment paper.
  6. Seasoning with garlic powder, paprika, salt, and pepper.
  7. Bake for 25-30 minutes, flipping halfway through.
  8. Serve and enjoy!
