Ingredients

- 1 pound Smoked Sausage (Andouille or Kielbasa)
- 2–3 Bell Peppers (mixed colors: red, yellow, green)
- 1 medium Onion (yellow preferred)
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Paprika
- Salt and Pepper (to taste)
- Wooden Skewers (soaked in water if grilling)
Instructions
- Preheat the oven to 400°F (200°C).
- Prep the veggies by washing and chopping the bell peppers and onion into bite-sized pieces.
- Cut the smoked sausage into 1.5-inch pieces.
- Assemble the skewers by alternating sausage and vegetables.
- Drizzle remaining olive oil across the skewers on a baking sheet lined with parchment paper.
- Seasoning with garlic powder, paprika, salt, and pepper.
- Bake for 25-30 minutes, flipping halfway through.
- Serve and enjoy!
