- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped

- 1 bell pepper, chopped
- 1 teaspoon paprika
- Salt and pepper to taste

- Chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sizzle the sausage slices for about 4-5 minutes until caramelized.
- Add the chopped onion and minced garlic, sauté until translucent.
- Toss in the bell pepper and simmer for another 3-4 minutes.
- Bring in the rice, chicken broth, paprika, salt, and pepper, mixing well.
- Let it simmer, covered, for 20 minutes or until rice is cooked.
- Fluff the rice with a fork, adjust seasoning, and serve.
- Garnish with chopped parsley before serving.
Notes
For a lighter option, use chicken or turkey sausage. If you want to experiment, you can swap out the sausage for portobello mushrooms or tempeh to make it vegetarian.
