Ingredients

  • 1 cup pumpkin purée
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup flour or oats
  • 1 cup milk or dairy alternative
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Optional toppings: nuts, seeds, or dried fruits

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the pumpkin purée, milk, and eggs in a large mixing bowl.
  3. Add the brown sugar, cinnamon, nutmeg, and salt, mixing until well-combined.
  4. Combine the oats (or flour) with the baking powder in another bowl.
  5. Mix the dry ingredients into the wet mixture gently.
  6. Prepare an 8×8-inch baking dish by greasing it.
  7. Bake for 30–35 minutes until golden brown.
  8. Cool for 10 minutes before slicing into squares.

Notes

Serve warm with maple syrup or honey. For a richer treat, add Greek yogurt or whipped cream on top.
