Instructions
- Prep the potatoes by washing and peeling them, then cut into 1-inch cubes.
- Seasoning time: Drain and pat the potatoes dry, then toss with olive oil, garlic powder, Italian herbs, salt, and pepper.
- Sear the potatoes in a large skillet over medium-high heat for about 10–15 minutes, flipping halfway through.
- Add the pepperoni to the crispy potatoes and cook for an additional 3–5 minutes.
- Sprinkle the shredded cheese over the top, cover with a lid to melt, or broil for an extra bubbly finish.
- Drizzle ranch dressing over the dish and stir gently to combine.
