  • 4 medium-sized Yukon Gold or Russet potatoes
  • 1 cup pepperoni, sliced
  • 1 cup ranch dressing

  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt & pepper to taste

Instructions

  1. Prep the potatoes by washing and peeling them, then cut into 1-inch cubes.

  3. Sear the potatoes in a large skillet over medium-high heat for about 10–15 minutes, flipping halfway through.
  4. Add the pepperoni to the crispy potatoes and cook for an additional 3–5 minutes.
  5. Sprinkle the shredded cheese over the top, cover with a lid to melt, or broil for an extra bubbly finish.
  6. Drizzle ranch dressing over the dish and stir gently to combine.
