Description
A nostalgic and delicious twist on a classic hamburger casserole with crispy bacon and tangy dill pickles, layered in cheesy goodness.
Ingredients

- 1 lb ground beef
- 4 slices of bacon
- 4 medium potatoes, diced
- 1 ½ cups sharp cheddar cheese, shredded
- 1 cup dill pickles, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the bacon in a large skillet over medium heat until crispy. Remove and drain on paper towels.
- Sauté the onion in the same skillet until soft, about 3–4 minutes. Add the minced garlic and cook for another minute.
- Brown the ground beef in the skillet until no longer pink and moisture has evaporated. Season with paprika, salt, and pepper.
- Combine the cooked beef and onion mixture with diced potatoes, chopped pickles, and crumbled bacon in a large mixing bowl.
- Fold in half of the shredded cheddar until combined.
- Pour the mixture into a greased baking dish and top with the remaining cheese.
- Bake covered with foil for about 35–40 minutes.
- Remove the foil in the last 10 minutes to let the cheese get golden and bubbly.
Notes
Serve with extra dill pickles and a simple green salad for the perfect meal. This dish can also be made ahead of time or frozen for later use.
