Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup milk
- 2 large eggs
- ¼ cup melted butter
- 4 oz cream cheese
- 4–6 fresh jalapeños, diced
- ½ cup cooked and crumbled bacon
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C) and grease your muffin tin.
- Mix the cornmeal, flour, baking powder, and salt in a large bowl.
- Whisk together the milk, melted butter, and eggs in another bowl.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Mix the cream cheese, jalapeños, crumbled bacon, and half of the cheddar in a separate bowl.
- Fold in the cream cheese mixture into the cornbread batter.
- Scoop the batter into the muffin tin, filling each compartment about ⅔ full.
- Top with the remaining cheddar cheese.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Cool for a few minutes before removing from the tin.
Notes
Serve with spicy dipping sauce like ranch or chipotle mayo, and garnish with cilantro or green onions for presentation.
