A comforting dish featuring crispy potatoes, seared steak, and zesty cowboy butter for a flavorful experience.


Ingredients

  • 1 lb Baby Potatoes
  • 1 lb Sirloin Steak
  • 1/2 cup Cowboy Butter (made with unsalted butter, garlic, fresh herbs, lemon juice)
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • 2 tbsp Fresh Lemon Juice
  • 1/4 cup Chopped Fresh Herbs (Chives or Parsley)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse your baby potatoes thoroughly and cut them in half. Toss in a mixing bowl with olive oil, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet and roast for 20-25 minutes, tossing halfway through.
  4. Season the steak with salt and pepper, then sear it in a hot skillet for about 4-5 minutes on each side for medium-rare.
  5. Mix the cowboy butter ingredients together until well combined.
  6. Assemble the bowls with roasted potatoes, sliced steak, and drizzle with cowboy butter.
  7. Garnish with chopped fresh herbs before serving.

Notes

Feel free to swap steak for grilled mushrooms or tofu for a vegetarian version. You can also customize the herbs in the cowboy butter based on what you have.
