- 1 lb Baby Potatoes
- 1 lb Sirloin Steak
- 1/2 cup Cowboy Butter (made with unsalted butter, garlic, fresh herbs, lemon juice)
- 2 tbsp Olive Oil
- Salt and Pepper to taste
- 2 tbsp Fresh Lemon Juice
- 1/4 cup Chopped Fresh Herbs (Chives or Parsley)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse your baby potatoes thoroughly and cut them in half. Toss in a mixing bowl with olive oil, salt, and pepper.
- Spread the seasoned potatoes on a baking sheet and roast for 20-25 minutes, tossing halfway through.
- Season the steak with salt and pepper, then sear it in a hot skillet for about 4-5 minutes on each side for medium-rare.
- Mix the cowboy butter ingredients together until well combined.
- Assemble the bowls with roasted potatoes, sliced steak, and drizzle with cowboy butter.
- Garnish with chopped fresh herbs before serving.
Notes
Feel free to swap steak for grilled mushrooms or tofu for a vegetarian version. You can also customize the herbs in the cowboy butter based on what you have.
